Spinach Dip Recipe from Kel

I LOVE spinach dip, with sour dough bread, yum! We often had pot lucks at work and one woman often brought home made spinach dip. It's amazing! and here is the recipe:

Spinach Dip
  • 2 pkgs frozen chopped spinach
  • 500ml sour cream
  • less than 500 ml best foods mayonnaise
  • 1 can water chestnuts (chopped)
  • 1 pkg Knorr veggie soup mix

Microwave the spinach to defrost and slightly cook. In a bowl mix sour cream, water chestnuts and veggie soup mix. Use the 500ml sour cream container to measure out the mayonnaise. I fill it to about an inch below the rim. You can always add more to taste. Add the mayonnaise and drained spinach. Stir really well and refrigerate for at least 2 hours so the soup mix can soften. Taste and adjust mayo if needed.
